Hearty Irish Stew – A St. Patrick’s Day Classic 🍀

Made with smoked beef chuck, rich stout beer, and bold Whiskey Bent seasonings, this stew is pure comfort in a bowl. Whether you're cooking for a gathering or just want a warm and hearty meal, this slow-cooked, flavor-packed dish is a must-try.


Ingredients:

✔️ 4 lbs beef chuck roast, cubed
✔️ 2 tsp Whiskey Bent “The Brizzy” seasoning
✔️ 1 tbsp oil
✔️ 6 cloves garlic, minced
✔️ 1 medium onion, chopped
✔️ 2 cups diced carrots
✔️ 1 cup chopped celery
✔️ 2 bay leaves
✔️ 4 cups beef stock
✔️ 16 oz. Whiskey Bent “Eastbound & Pecan Bound” beer (or your favorite stout)
✔️ 1 lb baby red potatoes, whole
✔️ 1 tbsp fresh parsley, chopped


Instructions:

🔥 Step 1: Smoke the Beef
Preheat your grill to 225°F. Season your cubed chuck roast with Whiskey Bent “The Brizzy”, then place the meat on a baking sheet and smoke for 45 minutes.

🔥 Step 2: Brown the Meat
While the beef smokes, heat 1 tbsp oil in a Dutch oven over medium-high heat. Once the beef is done smoking, remove it from the grill, increase the grill temp to 300°F, and transfer the beef into the Dutch oven. Sear until browned on all sides.

🔥 Step 3: Build the Flavor
Stir in garlic and onions, sautéing for 5 minutes. Then, add carrots, celery, bay leaves, beef stock, and beer. Cover and transfer to the grill at 300°F or leave on the stovetop over medium heat. Let it simmer for 2 hours.

🔥 Step 4: Add the Potatoes & Finish Cooking
Stir in baby potatoes and parsley, cover, and cook for another 45 minutes. Taste and add extra “The Brizzy” seasoning if needed.

🔥 Step 5: Thicken & Serve
If the stew needs thickening, mix a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) and stir it in. Otherwise, serve the rich, smoky, beer-infused stew hot and enjoy!
